Our chef was inspired by the classic seasonal dessert the "Mont-Blanc", and reviewed it in an entremets version lighter, less sweet and more flavorful. The meringue was subtly replaced by a moist chestnut sponge cake topped with almond and vanilla crunch, and the chestnut cream was lightened and transformed into an airy chestnut mousse.
